Zucchini pasta with homemade basil pesto


You will need: A spiralizer, 1 medium peeled zucchini, a little olive oil

spiralize your zucchini into a preheated sautee pan greased with about 1 tbsp of olive oil on high heat, once the zucchini starts cooking, turn the heat to low-medium and cover for 5 minutes until soft

For Basil Pesto (

You will need: a food processor, 1 clove garlic, 1 cup fresh basil, 1/4 cup Parmesan cheese, 2.5 tablespoons olive oil, salt and pepper

pulse all of the ingredients except the olive oil in the food processor.  As you pulse, add the olive oil gradually until smooth
