Cauliflower Crust Pizza

Makes 2 servings

What you’ll need: 1/2 head cauliflower grated (or chopped in a food processor), 1 large egg lightly beaten, 1 1/4 cup part skim low moisture shredded mozzarella, 2tbsp parmesan cheese, 1/4 cup tomato sauce, 1 cup grape tomatoes sliced in half, 2 cloves garlic sliced, 1/4 tsp red pepper flakes, fresh basil (optional)

Line a pizza pan baking sheet with parchment paper, preheat oven to 425 degrees.  Grate cauliflower, place in a bowl and microwave for 7-8 minutes until soft.  Remove and let cool.  Mix in the egg, one cup mozzarella, parmesan cheese, and salt and pepper.  Once combined, pat mixture into the 10 inch pizza pan.  Spray lightly with nonstick spray and bake for 10-15 min until golden.  Top the pizza with the sauce, 1/4 cup mozzarella, grape tomatoes, garlic, and red pepper flakes.  Bake another 10 minutes.  top with basil before serving
