Grilled Salmon Kebabs


What you’ll need: 2 tbsp chopped oregano, 2 tsp sesame seeds, 1 tsp ground cumin, 1/4 tsp red pepper flakes, 1-1/2 lbs wild atlantic salmon fillet (cut into 1 inch thick pieces), 2 lemons (thinly sliced into rounds), olive oil cooking spray, 16 bamboo skewers soaked in water for 1 hour

Heat grill on medium heat and spray with oil.  Mix spices in a small bowl and set aside.  Beginning and ending with salmon, thread salmon and folded lemon slices onto 8 pairs of parallel skewers to make 8 kebobs total.  Spray kebobs lightly with oil, and season with mixed seasonings.  Grill the fish turning throughout until turning a white opaque color
