Cauliflower “Fried Rice”

What you’ll need: 1 medium head cauliflower, 1 tbsp sesame oil, 1 large egg, 2 large egg whites, pinch of salt, cooking spray, 1/2 small onion (diced fine), 1/2 cup peas and carrots, 2 cloves garlic (minced), 5 diced scallions (whites and greens separated), 3 tbsp low sodium soy sauce

Remove core of cauliflower and cut into florets.  Pulse florets in food processor until it reaches a rice/couscous texture..set aside.  Combine egg and egg whites in a bowl and beat with a fork, season with salt and set aside.  Heat a large sautee pan on medium heat and spray with oil, cook eggs until set and set aside.  Add sesame oil, sautee onions, scallion whites, peas and carrots, and garlic about 3-4 minutes or until soft.  Raise the heat to medium-high, Add cauliflower “rice” to sautee pan with soy sauce.  Mix and cover approximate 5-6 minutes stirring frequently until cauliflower is crisp on the outside yet tender on the inside.Add the egg then remove from heat and mix in scallion greens
