What you’ll need: 8-4oz boneless chicken cutlets, 3/4 cup whole wheat seasoned breadcrumbs, 1/4 cup parmesan cheese, 4 tbsp melted butter/olive oil, 3/4 cup reduced fat shredded mozzarella cheese, 1 cup marinara sauce, cooking spray
Preheat oven 450F, prepare baking sheet with cooking spray. Combine breadcrumbs and parmesan in a bowl, and melted butter in another bowl. Brush butter onto chicken cutlets, and then dunk and coat chicken with breadcrumb mixture. Place on a baking sheet, and repeat with remaining chicken. Lightly spray chicken with olive oil spray and bake for 20 minutes.Flip and bake for another 5 minutes
Remove from oven, spoon 1 tbsp marinara sauce on each chicken cutlet. Top each cutlet with 1.5 tbsp shredded mozzarella and bake for another 5 minutes or until cheese is melted.
