Muesli Protein bars

Ingredients: 1.5 cups quinoa flakes, 1/2 cup chopped nuts, 1/4 cup seeds, 1/4 cup coconut flakes, 1/2 cup vanilla protein powder, 1 egg, 2/3 cup plain greek yogurt, 1/3 cup nut/seed butter, 3 tbsp honey, 2 tbsp coconut oil-melted, 1/2 cup dried fruit.

Preheat oven to 350F.  Line a 8×8 baking pan with foil and spray with nonstick oil.  Spread quinoa, nuts, seeds, and coconut flakes on pan and bake until toasted, about 6-8 minutes. Transfer to a large bowl and let cool.  Combine quinoa mixture with remaining ingredients and stir until well combined.  Spread batter evenly onto prepared baking dish.  Bake 14 minutes or until top is golden brown.  Remove and let cool.  Makes 12 bars
