Baked avocado fries

Ingredients: 2 large avocados-sliced, 1/3 cup flour, salt and pepper. 1 tsp chili powder, 2 eggs-beaten, 1 cup panko breadcrumbs

Preheat oven to 425F.  Set three bowls in an assembly line, 1 bowl with flour, salt and pepper, and chili powder.  Second bowl with beaten eggs, third bowl with breadcrumbs.  Place sliced avocado in flour and lightly coat, next in eggs, then in breadcrumbs.  Place all avocado slices on a wire rack on a baking sheet and bake for 20 minutes or until golden brown.
