Apple Cinnamon Protein Muffins


Makes 9 muffins

Ingredients: 1 cup oats, grind into flour in a food processor, 1/3 cup+2 tbsp almond flour, 2 scoops vanilla whey, 1.5 tsp cinnamon, 1 tsp baking powder, 1 tbsp sweetener (brown sugar or coconut sugar), 1/3 cup+2 tbsp unsweetened applesauce, 1 tsp vanilla extract, 1 egg, 1 egg white, 1/3 cup almond milk, 75g chopped apple+cinnamon

Preheat oven to 350F

Chop apple and sautee in a pan together with cinnamon and 1 tsp brown sugar or coconut sugar until soft..  Mix all ingredients except chopped apple in a blender or food processor.  Pour batter into muffin tins (preferably silicone) and top with apple and some more sweetener.  Bake 17-19 minutes.  Remove from oven and let cool.  Make sure you dont over bake them!
