Healthy fudgy avocado brownies

Ingredients: 1 large ripe haas avocado (just about 1 cup mashed), 2 eggs, 1 tbsp water, 2 tsp vanilla extract, 3.5oz bar dark chocolate, 1 cup+1 tbsp cocoa powder, 1/4 cup sugar, 1/2 tsp baking soda

Preheat oven to 355F. Grease 8X8 square baking pan.  In a food processor, puree avocado with eggs, vanilla, and water until smooth.  In a bowl, microwave your chocolate bar until melted.  Mix chocolate through avocado mixture in the food processor until combined.  Add cocoa, sugar, and baking soda and mix with food processor.  If your texture is too thick, just add 1 more tbsp of water.  Scoop out batter into prepared pan and spread evenly, smoothing out the batter to reach all edges.  bake 20-25 minutes or until toothpick comes out clean.Leave to cool before removing brownies in pan.  Chill in fridge before serving.
