Mini protein blueberry cheesecakes


Ingredients: 12 oz fat free cream cheese, 5.3 oz nonfat blueberry greek yogurt, 1/2 tsp vanilla extract, 2 large eggs, 3 tbsp blueberry jelly, 2 scoops vanilla protein powder, stevia to taste, 6 tbsp graham cracker crumbs, 1/2 cup frozen blueberries

Method: mix together all ingredients except graham cracker and blueberries until smooth. Take out 15 silicone cupcake tins and spray with nonstick spray.  evenly distribute graham cracker into each tin. Followed by evenly distributing cheesecake batter into each tin on top. Top with blueberries. Bake 20 minutes on 350F.  Let cool 30min-1 hour or keep in fridge until cooled
