Ingredients: (for the pudding) 1 slice of bread, 1/4 cup unsweetened almond milk, 1.5 tbsp unsweetened applesauce, 1 whole egg lightly beaten, 1/2 tbsp stevia, 1 tbsp cinnamon, 1/2 red apple chopped
(for the protein sauce) 1/2 scoop vanilla whey protein powder, 1/4 cup nonfat plain greek yogurt, 1/4 cup unsweetened almond milk
In a large bowl, add almond milk, applesauce, egg, cinnamon and stevia. beat lightly with a whisk until well blended. fold in bread cubes and apple. Transfer to a small ramekin..cover and refridgerate for at least 15 minutes. This will allow the bread to soak up the liquid..
Preheat oven to 350F and bake bread pudding for 20-25 minutes until its set and the top turns golden brown. Remove from oven and allow to cool.
Make the sauce by adding protein powder to yogurt in a mixing bowl and mix with a spoon until well combined. Add milk and stir until creamy. Pour over bread pudding.
