Cinnamon sweet potato and apple latkes



2 cups grated sweet potatoes

1 cup grated granny smith apple

1 egg

1/2 tsp baking power

1 tsp cinnamon

2 tbsp whole wheat flour/whole spelt flour/all purpose flour

1 tbsp oat bran

1 tsp flax seed meal

canola oil

Grate sweet potato and apple.  With a paper towel extract as much liquid as possible from potato and apple and place into a bowl discarding the towel.  Add remaining ingredients to the bowl minus the oil  Heat oil in a large nonstick pan, when hot scoop out tablespoon of mixture using a soup spoon and place on pan pressing down with reverse side of the spoon.  Cook in batches, adding more oil if needed.  When browned flip and cook reverse side.  Place on a paper towel lined plate.
