Hummus crusted chicken



4 boneless skinless chicken breasts

salt and pepper

1 large red pepper

1 large yellow pepper

1 large onion

1 cup hummus

1 tbsp olive oil

lemoj juice

1 tsp smoked paprika

Preheat oven to 450F. Prepare one large baking dish with cooking spray. Season chicken with salt and pepper. In a large bowl toss cut onion, pepper and olive oil.  Season with salt and pepper. Place all veggies on bottom of baking dish.  Cover chicken with hummus until evenly coated. Place chicken on top of vegetables and lightly top with lemon juice and sprinkle paprika over chicken and vegetables as well.  Bake for 25-30 minutes until chicken is cooked through and vegetables are tender. Serves 4
