Peanut Butter and Banana Nut Muffins



2 cups Whole wheat pastry flour

1 tbsp baking powder

1/2 tsp salt

1/2 cup natural creamy peanut butter

1/2 cup packed light brown sugar

3/4 cup plain almond or nondairy milk

3 bananas mashed

1 tsp vanilla extract

1/2 cup chopped walnuts or peanuts

Heat your oven to 375F.   Grab your muffin tin and grease it or put in muffin liners.

In a big bowl, mix together flour, baking powder, and salt. set aside. In a smaller bowl, mix together peanut butter, and brown sugar until creamy. Stir in milk,mashed banana, and vanilla until mixed. Pour the wet ingredients into the dry and stir until combined. If you mix too much your muffins will be tough. Fold in nuts. Scoop batter into muffin cups until all filled. Bake until a tooth pick comes out clean. 18-22 minutes. Take them out of the tin and let cool for at least 15 minutes before eating
