Double Fudge Banana Muffins



1 egg

1/4 cup brown sugar (i used coconut sugar)

1/3 cup unsweetened apple sauce

1 tsp vanilla

3 bananas mashed

1 cup oat flour

1/2 tsp baking powder

1/2 tsp baking soda

1/4 cup cocoa powder (i used Hershey’s Special Dark)

1/3 cup chocolate chip (optional, i used white chocolate chips)

Preheat oven to 350ºF. Grease muffin tin to make 10 muffins. Whisk together the egg, sugar, applesauce, vanilla, and bananas. Mix the dry ingredients and then add to the wet. Mix just until combined. Add some chocolate chips if you want. Bake for about 20-25 minutes or until toothpick comes out clean
For 1 muffin: (with chocolate chips) 142 calories, 3.8g fat, 25g carbs, 3.9g protein
