Maple Oat Banana Bread



2 cups oat flour

1 cup whole wheat pastry flour

1 tsp baking soda

1 tsp cinnamon

1/4 cup almond milk

1/4 tsp apple cider vinegar

4 bananas mashed

1/3 cup maple syrup

3 tbsp olive oil

1 tsp vanilla extract

Preheat oven to 350F and grease and flour a standard loaf pan. In a medium bowl mix flours, baking soda, and cinnamon. In a small glass mix almond milk and apple cider vinegar. In another medium sized bowl mix banana, maple syrup, olive oil, and vanilla. Pour the milk mixture into the wet ingredients and mix. Next pour the dry ingredients to the wet ingredients and mix until there are no lumps left.

Pour the batter into the pregreased pan and bake for 30-40 minutes until top is browned and toothpick comes out clean. When finished, remove from pan and let the bread cool on a cooling wrack.
