Stuffed Buffalo Chicken Breasts



1/4 cup 2% cheddar

4 wedges laughing cow blue cheese

1/3 cup celery chopped

1/4 cup green onion chopped

1/4 cup chopped carrot

5- 3oz thin boneless skinless chicken breasts

15 reduced fat ritz crackers, crushed

1 tbsp light mayo

6 tbsp frank’s red hot sauce

1 tbsp lemon juice

2 tsp light butter, melter

1/2 tsp garlic powder

Preheat oven 400F.  Mix together cheddar cheese, laughing cow, celery, carrots, and green onion in a dish

In one bowl crush crackers, in another bowl mix together mayo, 5 tbsp hot sauce, and lemon juice.

Lay the cutlets out on a surface and divide cheese mixture among the chicken and top with each.  Roll chicken and dunk in mayo mixture then in crackers.  Place on baking sheet, seam side down.  Top chicken with nonstick oil spray and bake for 30 minutes.  Mix together butter, 1 tbsp hot sauce, and garlic powder.  When chicken is done baking, top with hot sauce mixture and serve
