Easy Broccolini Flounder Bake



4 flounder fillets (4oz each)

3/4 cup cherry tomatoes, sliced in half

6oz broccolini

2 tsp olive oil

2 cloves garlic minced

1 pinch of red pepper flakes

2 tbsp grated parmesean cheese

2 tbsp lemon juice

1 tbsp oregano

Preheat oven to 450F. Chop 1 inch off the ends of broccolini and slice in half length wise. Heat a large skillet over medium heat. Add 1 tsp olive oil and sautéed broccolini for 4 minutes until tender. Add tomatoes and cook 1 more minute. Add garlic and red pepper and cook another minute. Remove from Heat

Place flounder in a baking dish and drizzle 1 tsp olive oil, lemon juice, and oregano on top. Bake 5 minutes. Remove from oven and add broccolini mixture and parmesean cheese on top of fish. bake again until cooked about 10 minutes
