Roasted potatoes, chicken sausage, and peppers



1.5lb or 3 large russet potatoes (peeled and chopped into 1 inch pieces)

1 medium onion, peeled and quartered with layers separated

2 bell peppers, seeded and cut into 1 inch pieces

2 tsp extra virgin olive oil

1 tsp rosemary

salt and peppers to taste

1 tsp garlic powder

1 lb italian chicken sausage sliced into 1 inch pieces

Preheat oven to 375F and prepare baking sheet with foil.  In a large bowl combine potatoes, onion, peppers, oil, rosemary, salt and pepper, and garlic powder until everything is evenly coated.  Place on baking sheet and bake for 15 minutes in the center of the oven.  Use a spoon to toss so nothing burns.  Add the sausage to the baking sheet with potatoes and veggies and bake for 25-35 min tossing once or twice until potatoes are cooked through.
