Double Chocolate Chunk Walnut Cookies



1/2 cup sugar

1/2 cup unpacked dark brown sugar

1/4 cup mashed avocado

1 tablespoon unsweetened applesauce

1 large egg white

1 tsp vanilla

1/2 cup white whole wheat flour

1/3 cup all purpose flour

1/3 cup unsweetened cocoa powder

1/4 tsp baking soda

1/8 tsp salt

1/3 cup semisweet chocolate chunks

1/2 cup chopped walnuts

In a large bowl, mix with a hand blender, sugars, avocado, applesauce, egg white, and vanilla until sugar dissolves.  In a separate bowl whish together flours, cocoa powder, baking soda, and salt.  In two additions fold in the dry ingredients into the wet ingredients.  Fold in chocolate chips and walnuts.  Cover bowl and refrigerate for 15 mins.  Scoop out 1 tablespoon of mixture and place on baking sheet prepared with parchment paper.  Repeat for rest of cookies until you have 24 cookies.  Bake on 350F for 10-12 minutes.  Let cool on tray for 5 minutes.  Remove cookies and place on wire rack until completely cool
