Passover Pecan Bars 


(Crust) 1 cup matzo meal

1/2 cup matzo cake meal 

1 cup packed brown sugar 

1/4 cup ground toasted pecans 

1/2 tsp cinnamon

6 tbsp unsalted butter 

1 egg white 

(Filling) 1 1/3 cup packed brown sugar 

1/2 cup maple syrup 

2 tbsp unsalted butter, melted 

1 tbsp vanilla extract

1 tsp lemon juice 

5 large egg whites

1 large egg

1/3 cup sweetened coconut flakes 

2 tbsp finely chopped pecans 

Preheat oven to 350F. Mix matzo meal, matzo cake meal, brown sugar, pecans, and cinnamon in a bowl with a whisk. Cut butter into mixture until it looks like dry course meal. Add 1 egg white and stir until moist. Press into the bottom of a 13×9 baking dish coated with cooking spray. Bake for 20 mins until edges start to brown, cool for 15 minutes. 

For the filling, In a bowl, mix brown sugar, maple syrup, butter, vanilla, lemon juice, egg whites and egg with a whisk. Stir in coconut and pecans. Pour over prepared crust and bake for 30 mins until set. Cool to room temperature, then let chill in the fridge for at least an hour. Cut into 48 bars
