Slow cooker turkey meatloaf 


1 large shallot, minced

1.5lb ground turkey 

2/3 cup whole wheat seasoned breadcrumbs

1/2 cup chopped mushrooms

1/4 cup ketchup 

1 egg, beaten 

1 egg white

1 tsp marjoram

1 tsp salt

In a large sautée pan, sautée shallot until golden. In a bowl mix together shallot, ground turkey, breadcrumbs, mushrooms, ketchup, egg, egg white, marjoram, and salt. Mix well, form into a loaf and place in a slow cooker. For the sauce mix 2 tbsp ketchup, 2 tsp worcester sauce, 1 tsp dijon, 1 tsp light brown sugar. Brush half the sauce over the loaf and refrigerate remaining in the fridge. Cook meatloaf on low for 6 hours. When done, brush remaining sauce on loaf and place in broiler for 1-2 minutes
