Baked Fish and Chips

Ingredients:

(chips)

4 medium russet potatoes-cut into 1/4 inch slices

4 tsp olive oil

3 garlic cloves, crushed

salt/pepper

1 tbsp chopped parsley

(fish)

1 egg

1 egg white 

1 tbsp lemon juice

1/2 tsp+1/8 tsp paprika

3/4 cup panko bread crumbs 

1.5 tbsp grated parmesan 

1 tbsp parsley 

1 tsp lemon zest 

4 – 5oz wild white fish fillets (atlantic cod)

Put oven racks in middle of oven. Preheat oven to 450F. 

For the chips: In a large bowl toss potatoes, oil, garlic, salt and pepper. Arrange in a single layer on baking sheet and bake until browned 12-15 minutes. Remove from oven, flip potatoes, and make room for fish. 

For fish: In a bowl whisk together whole egg, egg white, lemon juice, 1/8 tsp paprika, and pepper. In a shallow bowl, combine paprika, panko, parm, parsley, lemon zest. 

Pat dry fish and dip into egg mix and then panko mix. Place fish on baking sheets nestled into potatoes and spray tops with oil. 

Bake until golden and fish is cooked through, 10 minutes. 

Sprinkle potatoes with salt and parsley
